Simple to make with easy cleanup, foil baked fish with veggies is a deliciously healthy dinner recipe that takes minutes to make!

One of my favorite go-to dinner recipes that’s so easy to make is my oven baked fish in foil.

It’s made with white fish and vegetables like zucchini, cherry tomatoes and onions.

Serve with a baked potato or rice for a complete easy dinner!

To make this easy foil packet fish recipe:

  1. Start by lining a baking dish with 4 pieces of aluminum foil, then add sliced onions, cherry tomatoes, garlic, sliced zucchini and white fish.
  2. Season with olive oil, lemon juice, basil salt and pepper. Gently toss the vegetables to evenly coat.
  3. Fold the foil up into little packets, sealing it closed, and bake it in the oven until the fish is flaky and the vegetables are tender.

Besides being easy to make, I love cooking this foil baked fish with veggies because it’s a light and healthy dinner and the foil packets make clean up a breeze.

No pots, no pans and no scrubbing…Amen to that!

For my oven baked fish I like to use thin sliced zucchini, sliced yellow onions and cherry tomatoes.

The zucchini gets nice and soft, the onions almost caramelized and the cherry tomatoes are nicely roasted giving the fish a nice burst of flavor.

You can use any vegetables you’d like, just make sure they’re sliced small enough to cook through since the fish doesn’t take too long to cook.

The foil packets create steam, which keeps the fish nice and moist and the vegetables tender. (And it seals in all those yummy flavors.)

What kind of fish is good for baking?

Really any fish is good baked…it’s all in the seasonings baby ;).

For this foil baked fish, I like using white fish because it has a more delicate flavor and cooks quickly. It absorbs the lemon, garlic and olive oil nicely.

My favorite white fish to use is haddock, but you could also use tilapia, cod or flounder.

You could use salmon, but it does have a stronger fish taste and will take longer to bake.

How long does fish take to bake?

Usually white fish is pretty thin. It should only take about 20 minutes or so to fully cook through.

If you were cooking a thicker piece of fish like salmon or swordfish, that can take 30 minutes or more.

This foil baked fish has become one of my favorite recipes for cooking fish.

Aside from being easy cleanup and super flavorful, I can switch up the type of white fish I use and even the veggies in the foil packets.

A recipe that’s easily exchangeable is always a keeper to me :).

Foil Baked Fish with Veggies

Simple to make with easy cleanup, foil baked fish with veggies is a deliciously healthy dinner recipe that takes minutes to make!


  • 4, White Fish Filets, such as cod, flounder or tilapia
  • 1.5 cups Cherry or Grape Tomatoes, cut in half
  • 2 Zucchini, sliced thin
  • 1 Yellow onion, sliced thin
  • 2 tbsp Olive Oil
  • pinch of salt
  • pinch of pepper
  • 2 tsp Garlic Powder
  • 1.5 tsp Dried Basil
  • 1 Lemon


  1. Preheat oven to 375 degrees. Take 4 pieces of aluminum foil, about 10” each, and place on a large glass baking dish, folding up the edges to make a “packet”.
  2. Evenly distribute the tomatoes, zucchini and onion in each of the 4 packets. Place the fish on top.
  3. Drizzle each packet with olive oil and sprinkle evenly with salt, pepper, garlic powder and basil.
  4. Squeeze lemon juice on top.
  5. Using another piece of foil, place on top of the fish/veggies and seal the edges tightly. Repeat with other foil packets.
  6. Bake for 25-30 minutes until vegetables are tender and fish is white and flaky.
  7. Serve over rice, grain, or with baked potato.
