Wild Pacific Hung Smoked Salmon 200g Cut Long
You can tell wild salmon even before tasting it: it has a slightly duskier colour and finer grained texture. It reflects the salmons diet out in the ocean before it journeys – sometimes thousands of miles – to return to the freshwater river where it was born.
The wild salmon is very delicate and needs to be handled with extreme care. We hand filet and then dry salt the salmon. Once cured they are hung in our 50 year old kilns and cold smoked gently for in excess of 24 hours, using only whole oak logs. Once ready they carefully taken down and cooled, hand trimmed and then sliced ready for you. Naturally high in Omega 3, this wonderful indulgence is even good for you to.
We recommend you open the pack 30 minutes before serving, to allow it to breath which will produce its best flavour. Add a good dash of fresh lemon and cracked black pepper.
